Glazed Orange Carrots

Glazed orange carrots are a great side dish to serve along with salad or any meat or protein. Simple to make, pretty to look at, and good for you too! It’s also a great side-dish if you’re choosing to try the flexitarian diet. Instead of limiting your options, flexitarianism expands your horizons, allowing you to create new combinations of things you may have never tried before. We hope these glazed orange carrots are one of them.


ingredients

2 lbs. fresh carrots, sliced
2 tbsp. butter
1/4 cup SweeterSorts freshly squeezed orange juice
2 tbsp. brown sugar
2 tbsp. fresh parsley, minced

instructions

1. Add water to a saucepan and carrots. Bring to a boil. Once boiling, reduce heat, cover and simmer for 7-9 minutes or until tender. Drain the water.

2. Melt butter in a large skillet. Stir in orange juice and brown sugar. Add the carrots and parsley. Stir to coat. Cook and stir for 1-2 minutes, or until glaze is thickened.

3.Remove from heat and serve glazed orange carrots as a side dish or snack.
