Tangerine, Apple and Coconut Salad

This sweet, simple tangerine, apple and coconut salad is truly delicious- and so is the dressing! For the Salad:
2 SweeterSorts tangerines, peeled and sectioned
1 green apple, thinly sliced
1 cup shredded sweetened coconut
1/2 cup sliced almonds
3 cups of romaine lettuce

For the Dressing:
2 tbsp. SweeterSorts freshly squeezed tangerine juice
2 tsp. red-wine vinegar
2 tbsp. olive oil
Salt and pepper to taste.


1.Preheat oven to 350 degrees. On a baking sheet, spread coconut and almonds in one layer. Toss once halfway through. Bake until golden. Set aside.

2.In a small bowl, whisk together the ingredients for the dressing.

3.In a small bowl, whisk together the ingredients for the salad dressing. Let it sit for 10 minutes.

In a large serving bowl, add the lettuce, tangerines, apple, coconut and almonds. Drizzle with the dressing. Serve immediately.
