Grapefruit Cake

Yay, healthy cake! Well, sort of. Well, not really. But you know what? It’s still delicious. Soft, moist cake with the juicy flavor of a true Florida grapefruit. A warm vanilla cake topped with cream cheese icing and fresh slices of grapefruit, you really can’t get any better than that.

ingredients

For the cake
1 SweeterSorts grapefruit, segmented & juice reserved
3 tbsp. freshly squeezed grapefruit juice
3/4 cup + 1 tbsp. flour
1/4 tsp. salt
3/4 tsp. baking powder
4 tbsp unsalted butter, softened
1 egg, room temp
2/3 cup sugar
1-1/2 tsp. vanilla
1/4 cup milk

For the icing
4 oz cream cheese, softened
2 cups powdered sugar, more or less to taste
1-2 tbsp. grapefruit juice

instructions

1.Preheat the oven to 350F.

2.In a medium bowl, whisk together the flour, baking powder and salt. Set aside.

3.In a large bowl, beat butter and sugar until light and fluffy. Beat the egg and add, mixing until well combined. Add grapefruit juice and vanilla and beat until combined (make sure to scrape the sides of the bowl while mixing).

4.Add half the dry ingredients and mix briefly to incorporate. Next, pour in milk and mix until just combined. Add the rest of the dry ingredients and mix until combined.

5.Oil and line a 8.5″ x 4.5″ loaf pan. Place half of the grapefruit segments onto the bottom of the pan. Pour the batter over the segments evenly.

6.Bake about 25 – 30 minutes. You can check by lightly pressing on the top, it will be done when it springs back. When done, let it cool on a cooling rack.

7.To prepare the icing, combine the cream cheese, grapefruit juice and powdered sugar, whisk together.

8.Once cooled, spread the icing over the cake. Top it off with the remaining grapefruit segments.
